Hindbeh bi zeit “dandelions or chicory”:

It is one of the easiest recipe, the only thing takes more time is checking the dandelion leaves and washing them well. It is simply prepared from basic ingredients in your kitchen. Hindbeh is served as an appetizer not a main dish. I love this Lebanese vegetarian dish as well as my children and now my grandchildren.

Cooking time: 15 mins

Serves: 4


2 bunches of Dandelion or chicory greens

5 medium onions

2 tbs vegetable oil

3 tbsp olive oil

1 1/2 tsp salt or as desire

1 lemon

PREPARATION: Wash the dandelion greens including the stems very well by soaking them in water and salt for 8 mins then rinse them thoroughly . In a large pot bring water to a boil then immerse the greens and cook them for about 5 to 10 mins depends how tender the stems are. When they are done drop the leaves in a colander. After cooling down, squeeze well the rest of the water between the palms of your hand. Now chop them coarsely and set aside

Chop the onions into wings then fry them into a large pan over medium heat using the vegetable oil until they become dark golden. Set aside part of the onions to garnish and it adds to it also an additional caramelized flavor. Add the chopped dandelions on top of the onions add the salt then combine them well. Saute over medium heat for about 5 mins then add the olive oil. If you noticed no spices needed for the hindbeh dish, its amazing taste comes from the combination of the onions and the olive oil.

Garnish with the rest of the caramelized onions Serve the hindbeh cold. Squeeze and add lemon if desire, honestly I prefer it myself without it.

Preparing the dandelion leaves ahead of time and keeping them handy in the freezer makes it very easy for you to prepare this dish, in no time you will have an amazing platter of hindbeh ready.

Dandelion leaves are very nutritious and healthy that’s why I prefer preparing hindbeh more often especially it is a side dish or an appetizer so you can add it to your table whenever you want to represent it to your family or your guests.
