Beef and vegetable stew is is a delicious dish that is easy to prepare, and like any other stew you can’t enjoy it without our famous vermicelli rice dish on the side.
This stew is a mixture of a variety of many vegetables in addition of beef which makes it a health meal for the whole family
Prep.time: 35 mins.
Cooking time: 30 mins.
Serves: 6
250 grams stir fry beef or tenderloin
One onion
2 to 3 cloves of garlic
11/2 to 2 tbsp of olive oil
2 medium tomatoes peeled and chopped
6 carrots cut in peaces
6 medium potatoes cut in cubes
400 grams green beans
11/2 cup peas
2 zucchinis if desired cut in peaces
1 tsp salt
1/2 allspice
1 tbsp tomato paste
31/2 cups water
PREPARATION:
Put the oil in a medium size pot, add the chopped onions garlic. Stir over medium heat until sautéed, add the beef stripes and stir fry until almost done add the tomatoes and the water and let it cook after boiling over medium heat for 20 mins or it might take more depends the kind of beef you’re using.
The meat should be almost done before adding all the vegetables, if adding zucchini, you can leave it and the peas to the last 5 mins, it takes around 12 mins to simmer, in between put the tomato paste, salt and allspice
This dish offers a warm, comforting embrace to the soul with every spoonful, give it a try and the whole family will love it
The rice:
1/3 cup vermicelli noodles
1 tbsp oil
2 cups water
1 tsp salt
How to prepare the rice: wash the rice first very well. In a small cooking pot, put the oil and roast the vermicelli noodles over medium to low heat until golden stirring occasionally preventing it from burning. Add the rice and keep stirring for few mins then add the water and the salt, when it starts boiling turn the heat down to low, cover the pot but not fully. Let it simmer after boiling for 10 to 12 mins. and it is better to keep it covered for 3 to 4 mins before serving.
