Ka’ak bi tamer/ Date fingers cookies

Date cookie fingers are aromatic Lebanese cookies made from fine semolina and flour in addition of the  mastic aroma then stuffed with dates flavored with rose water and orange blossom water that are amazing with tea or coffee.
Date cookie fingers are aromatic Lebanese cookies made from fine semolina and flour in addition of the  mastic aroma then stuffed with dates flavored with rose water and orange blossom water that are amazing with tea or coffee.

INGREDIENTS:


1 & 1/2 cup flour

1 cup fine semolina

1tsp anise

1/2 tsp mahlab

1/2 tsp Mastic with one tbsp sugar pounded together 

1 tsp baking powder

3/4 cup melted butter or unsalted vegan butter

3/4 cup milk

You can add 1/4 cup sugar if desired 

After mixing with butter add around 

3/4 cup milk or less or oat milk

2 tbsp of milk mixed with 2 tsp of honey or sugar

1 cup sesame seeds



STUFFINGS:

450 grams date paste

1 tbsp orange blossom water

1 tbsp rose water




DIRECTIONS:


Mix the date paste with both rose and orange blossom water and roll them to 10 cm long rolls and set them on aside.

For the dough, mix all dry ingredients  including the mastic and sugar after pounding them together then add the butter mix again with your hands,finally the milk and knead it until it becomes a nice soft dough.

Divide the dough to 8 pieces, start rolling the first piece then pat it into a thin rectangle around 12 by 6 cm, put the date roll then close the edges  and roll again until you have a long closed roll brush the roll with the mixture of milk and honey then dip it in sesame seeds, cut them into 4 cm pieces, repeat the same method with the rest of the dough.

Heat the oven to 410 degrees and bake them for 10 to 12 mins or until golden.

Once you have every part ready, it is very easy and joyful to prepare the date cookies.
