Apple Bran cake

Apple almond bran cake:

This cake is the perfect dessert with your afternoon coffee or tea. It is moist, perfectly sweet and delicious. Imagine the Bran cereal blended into this tasty apple cake in addition of the crunchy almond gives your family especially your kids the nutrition and the fiber they need for a healthy snack.

1 1/4 cup bran flakes

1 cup milk

3 eggs

1 tsp. vanilla

1 tsp. whisky or rum or substitute with a dash of salt

1 cup sugar

1/4 cup oil

2 1/2 cups flour

2 tsp. baking powder

1/2 tsp nutmeg

1/2 cup almonds sliced

3 medium apples

2 tsp cinnamon

PREPARATION: Soak the bran flakes in the milk for 20 mins. or until it softens. Heat the oven at 375 degrees. In a large deep bowl mix the eggs with the vanilla and rum using an electric blender or a whisk. Add the mixture of the bran flakes, the oil, the sugar and mix all the ingredients again.

In a separate bowl blend the flour and baking powder then add it to the bran mixture beating at low speed until well blended. Drop the almond pieces and mix. Peel the apples and cut into thin slices lengthwise then sprinkle the cinnamon spice all over them and mix well. Grease a rectangular oven tray 30 x 20 cm, spread half the amount of the cake mixture covering the bottom then arrange the apple slices all over finally pour the rest of the cake mixture covering the apples. Bake for 40 to 45 mins and few mins from the top.

I have tried so many bran cake recipes but this is one of the best. What also you’re going to like about it that you can make this cake quickly and easily without having any complicated ingredients.
