Bamieh w riz "Okra with meat"

This dish is famous in the Middle East especially in the Lebanese cuisine, it can be prepared with lamb or beef.

Okra stew is a terrific way to change how okra is served. This tasteful stew combines the distinguished flavor of okra with the aroma of fresh coriander mixed with the tomato sauce. More over the chunks of meat that adds to it the amazing taste you can’t resist.

Cooking time: one hour

Serves: 6

INGREDIENTS: 600 gr. frozen okra small

400 gr. Beef or lamb chunks

1 medium onion chopped

4 medium garlic gloves chopped

A cup of fresh coriander chopped

5 medium tomatoes

2 tbsp tomato paste

3 cups of water

1 1/2 to 2 medium lemon juice

1 tbsp oil

1 tbsp butter

1 tsp salt

1/4 tsp all spice

The rice:

1 cup rice

1/3 cup vermicelli noodles

1 tbsp oil

2 cups water

1 tsp salt

PREPARATION: Pour the oil in a medium cooking pot, the chopped onions and the chopped garlic. Saute over medium heat until light golden add the meat chunks and cook until the meat is done.

Wash the tomatoes, peel them by soaking them in boiled water for 3 mins then chop them and add them to the meat mixture. Let it simmer for 5 mins then add the water and let it cook over low heat for 30 to 40 mins depends how tender the meat is. Now pour the lemon juice in the pot then the okra and let it simmer for 15 mins. or until the okra is tender. Add the tomato paste, salt, allspice, the butter and the chopped coriander and let it simmer again for another 10 mins.

How to prepare the rice: wash the rice first very well. In a small cooking pot, put the oil and roast the vermicelli noodles over medium to low heat until golden stirring occasionally preventing it from burning. Add the rice and keep stirring for few mins then add the water and the salt, when it starts boiling turn the heat down to low then cover the pot but not fully. Let it simmer after boiling for 10 to 12 mins. and when it is done it is better to keep the pot covered for 3 to 4 mins before serving.
