Kafta and potatoes
Kafta and potatoes: In the Lebanese cuisine kafta is known as ground meat flavoured by the parsley, onions and spices. It can be grilled or cooked with potatoes, onions and tomatoes in the oven like the dish I am introducing in this recipe. When grilled it is delicious with hummus as a side dish.
Prep. time: 30 mins
Cooking time: 45 mins
Serves: 6 to 7
INGREDIENTS:
kafta:
750 grams lean ground beef
250 grams ground lamb
1 medium onion finely chopped
3/4 cup of fresh chopped parsley
1 tsp salt
1/2 tsp allspice
a pinch red chilly powder
4 large potatoes
1 large tomato sliced in rings
one large onion sliced in rings
half a sweet red pepper
1 tsp salt or as desired
1/2 tsp allspice
4 cups water
2 heaped tbsp tomato paste
PREPARATIONS:
The kafta: In a medium bowl using your hand, mix well the meat, the chopped onion, the parsley, allspice, black pepper and the pinch of chilly.
How to prepare the dish: Preheat the oven to 375 degrees. Using your hand divide the kafta into round patties, arrange them in a non greased oven pan and cook for 6 mins on each side or until done then set aside. Meanwhile peel the potatoes, wash and cut into slices 1 cm thick. Season the potato slices with salt and bake them in the same oven pan until light golden.
Add the kafta patties, the tomato rings the onion rings and the red pepper already cut into thin pieces. Mix the water with the salt, allspice and the tomato paste until it is dissolved well then pour it on top of all the ingredients then put it back in the oven. When it gets to boil , let it cook for 15 to 20 mins. Or until the potatoes are done. You serve it with rice as a side dish and enjoy . This is one of the dishes that you try once and you will have a desire for it again and again.
